Low Carb Series: Baked Chicken and Vegetable Sides

I am starting up my low carb diet again and am hoping to stick with it at least until my Brother`s wedding in May. I am hoping to just burn unwanted fat (bad fats) and tone up for Summer.

Last year, I was able to keep up with it for 2 month for my Vegas trip. But after the trip I just seemed to let my nutrition slide downhill. This is type of diet definitely takes a lot of preparation and work, but has more long term results and definitely much more healthy than "crash diets." It`s a healthy lifestyle that will hopefully give me the energy boost I need for my workouts.

With the diet I eat 3 meals a day and 2 snack, controlling my proportions and protein to carbohydrate to fat ratios.

I started tonight, and my dinner consisted of the following:

Baked Chicken: Seasoned with olive oil, paprika, garlic powder, thyme, sea salt, pepper, and lemon juice. Baked in an oven for 35 minutes at 375 degrees.

Cucumber & Tomato Salad: toss together diced tomato, sliced cucumber, diced green bell pepper, basil, parsley,fresh jalapeno (optional), and balsamic vinegar.

Steamed Green Beans (unseasoned)

This definitely was filling enough for me without weighing me down.

I will continue this series with other meals I make. Hopefully this will be helpful for anyone out there looking for more low carb, healthy meal options.
