Hey everyone! Upon my search for extremely low desserts(that also taste good of course) I came across several recipes that I`ll share with you guys. And get this, they`re all UNDER 100 calories per serving! These mini muffin yogurt cakes are super yummy and come in at only 35 PER muffin!!! Isn`t that incredible!
4 tbsps unsalted butter
1/2 cup sugar
2 tbsps lemon zest
3/4 cup flour
1 tsp baking powder
1/4 cup low-fat yogurt
1/4 cup lemon juice
1. Mix room temperature butter with sugar. Add lemon zest and egg. In another bowl mix flour and baking powder, sift into wet mixture. Pour in yogurt and lemon juice.
2. Spray mini muffin pan lightly, over greasing/spraying will damage cakes. Fill a little more then half way with batter. Bake at 350F for 10-15 minutes. Light brown on edges.
AND TADAM! low cal muffins to eat until your hearts content!
Recipe makes 36 mini muffins.
