I miss my mom and grandmother terribly when I was making this soup because they would make it for me all the time when I was younger since it was one of my favorite soups:) They would wake up early in the morning carefully boil the lotus roots in the clay pot for hours and wait till I come back from school before serving it on the dining table for lunch. I miss the good old days!:) I decided to make this lotus root soup for the hubs since he loves soup and I make it just the way the older generations make it: I added fresh lotus roots, goji berries, peanuts and red dates and boil the soup for at least 5 hours or till the peanuts are soft.
