I know this is one of the dishes that doesn`t look that appealing to many and a lot of my friends have never tried lotus roots before. I`ve always had it in soups and I really love eating this crunchy and slightly fibrous root plant. I remember my mom would used to boil the lotus roots with pork and it was one of my favorite dishes then. Our friend, Sister Mary who is from Guangzhou makes this slightly herb-like braised lotus root whit turn out to be a hit among her guests. It was so good and I must remember to get this recipe from her!
