I was really hungry for lunch today, so decided to have something filling. I bought a pre-cut veggie mix from my local grocery store, which included carrots, mushrooms, celery, red cabbage, zucchini, bell peppers, and broccoli, and stir-fried it with some seasoning. Then, I chopped up a fresh boneless, skinless chicken breast and cooked it with the veggies (once the veggies were almost done cooking, as they take longer to cook).
Once it was all cooked, I tossed the veggies and chicken with some rice. It was a really filling meal, and I wasn`t hungry again for several hours. :) I`m really getting into stir-fries now that I know I can get pre-cut veggie assortments at the grocery store - it makes it so easy to prepare! I`m thinking of trying to make some stir-fries with shrimp, turkey, and maybe ground pork in the future.
