This is a shredded chicken chili I had made in the crock pot and since we had so many leftovers, it was also my lunch today. I love crock pot meals, all you have to do is put everything in the pot, set it, and ultimately forget it. Easy peasy! This chili was a lot spicier than I anticipated it being, but I blame that on using a different brand of diced tomatoes with chilies. It was an "authentic Mexican" brand which may be the reason it was so amped up in spiciness. I put a can of black beans, a can of kidney beans, some remaining frozen corn we had in the freezer, 3 10oz cans of tomatoes with chilies, an 8 oz can of tomato sauce, a heaping tablespoon of chili powder & cumin, black pepper, sea salt and 1 1/2 pounds of raw, cleaned chicken breast. I set it on high for 6 hours and shredded the chicken into the chili when done. It was really good, but as I`ve mentioned incredibly spicy. Not too spicy that you can`t eat it, but you definitely go "whooo" after a number of bites.
