I am so happy that the weekend is finally here! It seems like I can never get enough of the weekends, specially when it`s the busiest time of the year and there are so much things to do at work. I love sleeping in the weekends and do whatever I like. Although I do tend to eat unhealthy during the weekend, this time I decided to try and make something good for myself that my body will not regret later :P
I decided to make shrimp salad which is very easy and fills you up fast. All you need for this salad is uncooked small shrimp (they sell them at regular grocery store deli for few dollars), tomatoes, chopped onion, and some parsley. I usually just add some salt and pepper and use olive oil instead of other sauces. I love this dish, it`s very refreshing and makes me feel more healthy.
