So today for lunch I made myself an Asian Inspired Chicken Salad. I`m trying to eat a bit more healthy and incorporate salad into my meals at least 3 - 5 times a week. I used regular iceberg lettuce for the bottom then I put a layer of sliced cucumbers....mmmm I love cucumbers! I then added about a third of a green pepper and sliced that into thin strips. I added some sliced baby carrots on top to add some color to the dish since everything was green lol. </div><div><br /></div><div>
Prior to assembling the salad I had deboned a chicken thigh and marinaded it in light soy sauce, red chili pepper flakes, onion and garlic powder and a little bit of sugar. I then heated up a pan with a couple tbsp of vegetable oil and let that cook for 20 minutes on low/medium heat. </div><div><br /></div><div>
For the dressing I made a sweet chili dressing. Yesterday I had gone to the Asian Market and bought myself a new bottle of Sweet Chili sauce so I thought it would be cool to make a dressing out of it. I didn`t feel like having Ranch or Italian dressing. I mixed the sweet chili sauce, lime juice, light soy sauce, vegetable oil and a touch of water to get my desired consistency. I put quite a bit of dressing on my salad because I don`t like a dry salad and this dressing was super simple to make and super tasty! </div><div><br /></div><div>
I loved how this dish came together, the crunchy vegetables, sweet and tangy salad dressing and the juicy chicken on top, made it a perfect lunch! I wouldn`t mind eating salad more often! I think next time I am going to try it with Tofu instead of Chicken and maybe add some noodles. </div><div><br /></div><div>
