Still on a meatless trek =) Hoping to save my meat quota for this weekend. I`m trying to convince my boyfriend to go to KBBQ with me.
This was what I was able to whip up for lunch within 15 minutes last night. I was very glad I had cut up all the vegetables and cooked the rice on Monday night so I didn`t have to go preparing everything from scratch again.
I used Glico Japanese Curry blocks as the base since I`m not so good at creating my own curry from scratch. The vegetables I used was a carrot, 1/2 a crown of broccoli and 1/2 cup of peas. This gave me 2 1/2 servings of vegetables =)
I also had some more seaweed and rice vinegar rice to go along with it. It went perfectly as the curry was fairly salty but the rice was sour from the rice vinegar so they balanced each other fairly well.
For just 250 calories, it really helped give me quota for the donut this afternoon!
