Yesterday, I managed to make 2 meals out of a Liptons Sidekicks pasta. So I had lunch for yesterday and a nice healthy packed lunch today!
As I couldn`t go grocery shopping this weekend, I had to make due with what`s in my fridge, freezer and pantry. I was able to make a very delicious ramen last week and this week, I was able to make a good pasta.
I took the Tomato Alfredo penne pasta from Lipton Sidekicks and I cooked it as per the instructions on the package. However, rather than using milk, which added calories and fat and I was lactose intolerant, I used a chicken broth. Then I added 1/2 a cup of frozen peas and 1/2 a cup of canned corn into the pot. Because it`s an additional cup of vegetables, the pasta sauce was not enough to flavor the entire thing. The chicken broth was a good addition as it helped to flavor some of the peas and corn. I added some paprika, basil and butter into the pot and I was able to bring in all the flavor from the tomato alfredo sauce.
This became incredibly filling due to all the vegetables. You get 2 cups of food per half the recipe whereas you normally get 1 1/2 cups of food from the full recipe if you don`t add things to it.
Overall, for 320 calories per lunch, this makes an amazing and healthy meal =)
The only bad part was that Lipton sidekicks pasta always seem to break part in the pot, no matter how careful I stir or how frequently I stir.
