Whenever I order Bibimbap takeout from a Korean restaurant, they end up giving me a lot more kimchi and rice than I can eat. So I found a great way to re-use the kimchi and rice without wasting it =) I grew up very poor so I know how terrible it is to waste food.
I put the kimchi and rice in a takeout box, seal it and put it back in the fridge. When left overnight, the rice would soak up some of the kimchi taste so it actually gets "seasoned" by itself.
Since fried rice is already made with leftover rice, this is a perfect dish to cook!
I decided to make it more healthy by adding in some frozen peas and corn, There`s only about 1/2 a cup of rice, but with the peas and corn, it became well over 1 1/2 cups of food but very healthy =)
I just toss in a whipped egg and more bibimbap sauce on the stove and you have lovely kimchi fried rice =)
