Had some time yesterday so I decided to prepare the ingredients to make lunch for the week =)
I boiled a huge pot of Japanese Sushi Rice as it`s one of the only rice I eat. I either stick with Korean Purple Rice with a lot of fibre or Japanese Sushi rice. They both have great texture.
Then I cut up 3 carrots and 2 crowns of broccoli.
For today, I made a nice vegetarian meal with Japanese Bechamel sauce. Bechamel is a cream based sauce that is used throughout French and Italian cuisine. The difference between the European bechamel sauce and the Japanese one is that the Japanese one uses more milk than butter and its a lot sweeter.
I used one carrot and 1/2 a crown of broccoli with a quarter cup of corn to make the vegetables for the sauce. That`s about 2-3 servings of vegetables.
Then I mixed rice vinegar with the sushi rice to make it more flavorful. I also added some white sesame as well as seaweed to add more flavor and texture to the rice.
In the end, I got a very hearty and healthy lunch under 250 calories.
