I had some time last night so I made myself a really good Chinese dish for lunch today.
I took the remainder of the spring beans and grilled them with clams. The seasoning I used was sweet soy sauce, sugar, and XO sauce. It was very simple but extremely delicious because the XO sauce really helped bring the flavor out of the clams. The spring beans also absorbed the taste of the XO sauce very well. The sweet soy sauce and sugar helped to balance out the savory taste and added a touch of sweetness to the dish.
I used Japanese sushi rice and instead of adding rice vinegar, I added some seaweed and white sesame seeds instead. This gave the rice a very nice crunch and earthy taste, while boosting its nutritional value.
Overall, it was a very satisfying and healthy lunch. I got a lot of compliments today =)
