This is my lunch from this afternoon. I had some chicken leftover from dinner - which I`ll be posting about, so I decided to make it into a sandwich. I took a large pita bread and put it over an open flame to make it nice and warm. I then spread 1 1/4 tablespoons of hummus onto the bread, added my chunked chicken that I heated in the microwave to get the chill off of it. I then added some diced red onion, diced plum tomatoes and sliced lettuce and topped it with a tablespoon of Italian dressing to keep the salad from seeming dry while eating. Overall, it was yummy and a nice twist featuring leftovers. It was also extremely filling.
