Don`t enjoy the texture of creamy guacamole? Me neither. I much rather dip my chip into a bowl of chunky but funky guacamole! This is a "recipe" I learned from my mother growing up because she too preferred chunky over smooth, well when it came to guacamole of course.....get your mind out of the gutter!
Every year my husabnd and I have the privileage to eat as much avocados as our hearts desire. We used to live in a rental home that had two huge avocado trees in the backyard. Every year we would have buckloads of avocados to share with our family and friends. We no longer liver there, but our ex landlord still has contact with us and asked if we wanted some avocados.
Chunky guacamole is quite simple to make. It just invloves a lot of chopping but it can be quite fun to make when you need to release some anger....just grab that knife and start chopping! lol.
What you will need:
1 1/2 roma tomatoes (or the which ever tomato you have available)
1/2 of a large onion
1 large avocado (or 2 small ones)
1/2 Lemon (or lime)
1 jalapeno (or more depending on how spicy you want it)
Chop the tomatoes, onion and guacamole and place in a bowl. Add chopped cilantro, salt to taste and lemon juice (I usually use lime but I was all out). Mix then add the finely chopped jalapeno pepper. mix and enjoy as a dip or as a topping on tostadas, tacos, you name it. It`s sooo good and healthy too!
By the way I like keep the avocado pit and put it on top of the salsa. Apparently it helps it last longer? I don`t know if that`s true or not but just do it okay? lol. Or you can wash it under cold water and grow an avocado tree in your backyard. haha. No seriously, you can.
So get your Mexican on and make some chunky but funky guacamole!
