My mom lightly sauteed left over chicken from Costco with bell peppers, mushrooms and tomatoes. Tah-dah, you have a light, simple yet healthy entree to eat with rice or just by itself with some vegetables.
What`s in this?
Left over chicken from Costco
Bell Peppers (yellow/orange/red)
Dash of salt/pepper
I`m sick of eating chicken by itself so when it`s sauteed together like this with a bunch of different flavors, it makes the chicken less dry and really delicious to eat. :) My mom also uses this method for squid and other meats too.
