Lemongrass Vermicilli

I had some leftover vermicilli noodles that I need to use up so I decided to make this Vietnamese inspired dish. My husband loved it a lot and as you can see, we love everything spicy. Have you guys tried the baby chillies, better known as bird`s eye chillies in Asia? They are HOOOH HOT and SPICY!

1 bag of vermicili noodles
3 cups bean sprouts
2 carrots
Soy protein (marinate in 1 tbsp of chopped lemongrass, 1tbsp of soy sauce, 1 tbsp of sesame oil, 1 tbsp of sweet ABC soy sauce)

1. Blanced noodles and bean sprouts. Set aside.
2. Grate the carrots.
3. Sautee soy protein in a pan. Once it`s done, toss in the noodles, bean sprouts and carrots. Sprinkle some grounded peanuts and serve with chilli.
