I was in the mood for a treat this weekend (meaning: cake!), so I stopped in at my local bakery for a latte and their cake of the day: lemon buttercream!
I love, love, love lemony desserts, and this one definitely "took the cake", lol! It was a vanilla bean lemon cake with lemon buttercream, lemon curd, and flaked coconut. It was amazing! The lemon curd was bright and tangy. Nothing beats a good homemade/handmade lemon curd, in my opinion - it tastes like sunshine, if it`s done right, and this one definitely was! There was a LOT of buttercream, but it was light, fluffy, and not too sweet. The cake itself was moist and also light. The black flecks (which you can see in the photos if you really look) are from the vanilla bean! I love vanilla bean, and prefer it to vanilla extract - it just tastes more vanilla-y to me, somehow. :) Finally, the coconut flakes on the outer edge of the cake were a really nice touch. You just can`t go wrong with coconut and lemon!
This cake was certainly an awesome treat. I am glad that my local bakery has this flavour on rotation. It`s one of my favourite cakes that they make! My other favourites include caramel pear, dulce de leche, and carrot. But their lemon buttercream cake is definitely up there! :)
