Yes the title says it all! This is literally lazy enchiladas! I was on Pinterest one day and I saw a post about easy enchiladas and I saw that recipe and it was ridiculously easy and perfect for me on this particular day I made them because I had all ingredients in my kitchen. The recipe was basically frozen taquitos baked in enchilada sauce and topped with cheese! Easy peasy right? So heres what I did; I took a small pyrex baking dish and first put some enchilada sauce at the bottom of the pan. I used a caned enchilada sauce but of course you can use homemade if you wanted to. Then I placed about five frozen taquitos in the pan. I used the El Monterey frozen taquitos that has chicken and cheese in them. Use good quality frozen taquitos and not the ones that are just shredded chicken thats dry inside with a yellow corn tortilla. The taquitos I used had chunks of chicken and cheese inside of it and is really good even if they werent made into enchiladas. Then I placed more enchilada sauce over the taquitos and shredded cheese on top with some cilantro, covered with foil and then baked for about 25-30 minutes at 350 degrees. I did add a bit more enchilada sauce over the cheese because I had a tiny bit left and didnt want to save it or throw it away so I just added it on top of the cheese. For the last 10 minutes of baking I baked it without the foil and that was it! I ate mine with some slices of avocado on top and it was really good! It was super easy and you can easily make this on a busy night when your trying to cook up something for dinner. Off course you can add sour cream, olives or whatever else you want on top of this so its up to you and the possibilities are endless!
