salt, black peppercorns
dry white wine
2 handfuls of black olives
Remove the skin and cut meat into pieces.

Season with salt and freshly milled pepper.
Drizzle with dry white wine and simmer until it evaporates.
Drizzle with hot water, cover the pot and simmer until meat is tender.
Wash, dry and Pit the olives.
Join the beef and cook a little longer.
Serve to taste.
Note: If you prepare this recipe with pork, season it with vines advance of garlic.
