Just made More Egg Muffins!!

I made these egg muffins and they are so super easy. These came out so much better than the last batch I made. I used foil cupcake liners instead of paper and less eggs so they didn`t overflow like the last ones.

Just whip up some eggs like you are going to make an omelette and grease up some foil muffin tins. Pour in your mix and put in the over for 400 degrees until they are browned on top. It usually takes around 20 minutes. I store them in ziplock bags and then pop them in the microwave for around 2 minutes in the mornings. I think 2 is good enough but if you are super hungry maybe 3 would do. I like them with a little pace picante sauce and am about to eat a couple for dinner. YUM!
