For lunch today, i had chicken and bacon along with a salad. I took chicken breasts and placed them into a cast iron pot along with strips of bacon. I then placed the pot into the oven and let it bake. When it was ready to take out, i was able to get the juiciest pieces of chicken that were super moist along with bacon pieces. As i let it cool, i made a salad on the side with a salad blend and added some balsamic vinaigrette as my dressing.
I would highly recommend using this cooking method for chicken if your looking for a fully cooked piece of chicken that is not dry at all!
