I never get tired of baking and tonight I made a Japanese Cotton Cake. For those of you who are familar with birthday cakes you get at chinese bakeries, this cake is really similar in texture. The only difference is that there is a stronger egg taste to it. But this cake is light and fluffy, as you can see in the second pic that I pressed it down with my finger and in the 3rd pic, it went right back up. And it tastes so good, just look at the last pic, it was all gone within 8 minute, not lying!!! So, I would love to share this recipe with you. Let`s get started.
60 gram butter ~ 1/4 cup
80 ml milk ~ 1/3 cup
90 gram sugar ~ 1/3 cup plus 2 Tbsp
80 gram cake flour ~ 2/3 cup
dash of salt
Preheat oven to 325 degrees. Melt butter in pan. Turn off heat. Add the flour and mix well. Then add the milk to the mixture and mix well. Then add one egg and mix well. Then add the rest of the yolks one or 2 at a time and mix well until the mixture is smooth. Beat the egg whites till it`s stiff. Add the salt to the egg whites while it`s beating. Then add the sugar in 3 stages while egg whites are beating. Once the egg whites are stiff, incorporate some to the yolk mixture. Then fold the yolk mixture into the egg whites slowy. Do not over fold. Then pour mixture into a parchment lined pan and drop the pan onto the table to get rid of excess bubbles. Bake for 25 min. Let cool on cooling rack and enjoy.
You can use this cake for birthday cakes or just eat this plain as is. One more thing is that make sure your egg whites are mixed properly otherwise , when the cake is done baking you will see that the top part of the cake is soft and fluffy while the bottom is hard, kinda like jello. I`ve had this happen to me twice before and it took some experimenting to see what I`ve done wrong and I`ve finally figured it out. One more thing, do not overbeat the whites till you see lumps, otherwise it won`t turn out right either.
