Jamaican Rice and Peas and Baked Barbecue Chicken

In my country as tradition we like to make this famous dish on Sundays with our family and friends. I can`t remember the last time I cooked a Jamaican dish so I wanted to see if I still had the magic.
1 cup Kidney Peas
1 can Coconut Milk
Black pepper and Salt
2 cups white rice
Put the kidney peas to soak in water overnight. When you are ready to cook...add kidney peas to boiling water, boil for 45 minutes to an hour or until tender( tender not soft). Then add one can coconut milk, scallion, thyme , seasoning and rice....cook for 1 hour or until rice is cooked....it`s different when cooking rice with other ingredients...takes a longer time to cook.
For the chicken, I also season a couple hours before cooking....cut up desired vegetables....carrots,peppers,garlic,onion,etc.... Bake sealed with foil for 2 hours.... Remember you are steaming so do not open foil until the two hours is over. You can add a little olive oil if you like but the chicken creates its own oil when steaming. Now you being your barbecue sauce on the stove top...I usual ally use anything I have in refrigerator...a little ketchup,honey,orange juice, molasses and if you want the short cut just combine sugar water and your favorite BBQ sauce
After 2 hours remove the foil from chicken as well as the vegetables...coat your meat with your BBQ sauce and broil... No oven this time because you are only giving the meat that BBQ coating but you want it to stick....so you must broil on each side for about 5 minutes....
Oh the other ingredient is sweet plantains, you can used whatever side you like. Sweet plantains are like bananas but you must fry them to enjoy.
