My husband has made this delicious Jamaican curry style, one of his Jamaican friend taught him how to make it so he decided to made his own version so this is what he did and this is the recipe below thanks to the web http://cooklikeajamaican.com/fays-curry-chicken/
4 lbs. of chicken chop in small bite sizes without the skin
lemon juice to wash the chicken
about 2-3 tsp salt
4 tsp. black pepper
6 tbsp. curry powder
4-5 cloves garlic finely chopped
1/4 small red bell pepper also finely chopped
1/4 small green bell pepper chopped
large cooking onion chopped
2 tbsp cooking oil
1tsp. cumin seeds but not powder
1 tsp. dried thyme
1 tbsp. tomato ketchup
1 tbsp. west indian pepper sauce
3 cups water
2 medium potatoes cut in 6 pieces
and last but not the least
long bean (optional)
cut and wash chicken, cut into serving size pieces maybe a bite size is ok, and then remove skin pour lemon juice into chicken wash and then drain.
season chicken with 2 tsp. salt, black pepper, 3 tbsp. of curry powder and then chopped garlic, put chicken in the fridge and marinate it for 1 hour.
Add cooking oil to saucepan then heat on high saute cumin seeds for 1/2 minute then followed by onion, red bell pepper and green bell pepper the add thyme, pepper sauce, 3 tbsp. curry powder, 1 tsp. salt and tomato ketchup, saute onion and pepper until tender the add 1 cup of boiling water and when sauce is boiling add marinated chicken, fold it chicken until it is well covered with sauce and seasoning then add the remaining 1 and 1/2 cups of boiling water cover and bring into a rolling boil then lower heat to medium, add potatoes and add another 1/2 cup of water cover and simmer until chicken is tender add long bean and add sauce to thicken about 1/2 hour, taste and add salt according to your taste if needed then serve.
