My boyfriend and I had fajitas for dinner tonight! Originally he wanted tacos, but I wasnt too thrilled with the idea since we had them like, 2 weeks ago, and I really wanted something different. He suggested fajitas and since I saw Hollys fajita posting, I wanted them even more. I had to pick up some chicken for a chicken taco chili I am making tomorrow, so we used some of the pack for the fajitas tonight and it was delicious!
My boyfriend cut up and cleaned the chicken for me (I have this serious issue with cleaning chicken it makes me incredibly nauseas) so I cut up two medium white onions, a green pepper and two red peppers. I sautéed my onions in 1 ½ tablespoons of olive oil, then added my chicken and cooked it through, then added in my peppers and let it cook for a few minutes. I used a fajita seasoning pack, so I added that in with a half a cup of water and let it simmer. The color wasnt as dark as I tend to like it, so I added in some chili powder. They were delicious! The peppers were still a bit crunchy, which is how I like them, and as the fajita meat sat on the stove (I let it rest for 5 minutes before serving) the sauce got thicker.
My boyfriend ate his on classic soft shells and I ate mine on a lavash bread, then topped it with diced tomatoes, sliced lettuce and salsa. Great meal! Ill be having this for lunch tomorrow, but probably switched up as a salad or something. Well see!
