Italian Chicken Packets

This is what I had for dinner tonight. I made my chicken in the same fashion as I do my "hobo bags" but instead of hamburger meat I am using chicken and going a more Italian inspired route.

I started by putting a single chicken breast into the middle of two sheets of aluminum foil. Next, I sliced up a lemon and put a couple slices on top of the chicken. Then I cut the florets off a head of fresh broccoli and put a handful over the top of the lemons. I scooped out some diced tomatoes and dropped them into the mix. I seasoned everthing with a bit of salt, pepper, and garlic powder. The final thing to go in was a quick splash of Italian dressing. I closed up the packets and placed them into a baking dish (just in case anything leaked from the packets). That went into a 450 degree oven for 25 minutes. VOILA! Done!

It was very, very good and everything was cooked but the broccoli, I think, could have benefited from about 10 more minutes of cooking. They still had a pretty strong bite to them, which some may like. Myself and my husband prefer them a bit softer. But, other than that it was good. The chicken was tender, juicy, and full of flavor. It had a very fresh, light taste to it.
