I came home to my boyfriend cooking up some homemade empanadas tonight! When we went to the grocery store he picked up the stuff he wanted to use (hamburger, jalapenos, green peppers and Goya discos). While I was out running errands he started prepping the filling. He told me he cooked the meat and sauteed his vegetables together which really made the jalapenos sweet while holding onto a little bit of their spice. The mixture combined is really good, flavorful but not overwhelming. He makes his empanadas/pastellitos differently than I do -- I add sauce into mine, he just uses straight seasoned meat with no sauce. When we cook them together we tend to go with one or the other. I really love his empanadas. He also makes them, seriously, gigantic. I hate when you buy them at festivals/stores and the shell is all air with a teaspoon of meat in it. Not even worth eating -- but my boyfriends? They`re packed with meat and just larger in general since he rolls the dough out a bit to make it this massive treat.
