Huevos a la Mexicana

I first had this tasty Mexican breakfast when I was on holiday in Mexico about 15 years ago and it`s so quick and easy to make that I still often make it for breakfast even years after my trip. All you need is some eggs, onions, tomatoes and jalapeno peppers. To start, heat some oil (preferably olive oil but any oil will do or even butter) in a large pan, add the onions and fry for a few minutes, then add the tomatoes and cook for a few minutes, then add the peppers and some oregano for seasoning if you like. Finally it`s time to add your eggs. You can either whisk them in a bowl before adding or just crack the eggs straight into the pan and stir. Add a bit of salt and pepper if you like and cilantro/coriander for the authentic Mexican flavour, although personally I hate coriander so never put that in. Then you are ready to serve. I eat mine with toast but you can also serve with rice or tortillas. And there you have it - a spicy scrambled egg breakfast, quick, easy and delicioso!
