You will need:
125g (5oz) Self raising flour
Half level tsp bicarbonate of soda
2 level tsp ginger
Half level tps salt
50g (2oz) medium oatmeal
75g (3oz) sugar
100g (4oz) syrup
65g (2 and a half oz) lard
125ml (quarter pint) water
1.) Grease and line base of a 18cm (7``) square cake tin.
2.) Light oven 160° C R3 - just below middle.
3.) Sieve flour, bicarb of soda, salt and ginger into a mixing basin, stir in oatmeal.
4.) In a different bowl beat the egg, add syrup and sugar.
5.) In a small pan boil the water and lard then add to the mixture in step 4 and beat.
6.) Pour this mixture onto the dry ingredients in step 3 and mix.
7.) Pour into a tin and bake for 30-40 mins until firm.
8.) Allow to cool slightly before turning onto a cool tray.
