Homemade zucchini chips

This is a post that Ive been meaning to put up but Ive completely forgot about it but here it is anyways. A family friend gave my family a bunch of their homegrown zucchini and I personally love zucchini and we just seemed to have so much of it so I decided to make some zucchini chips out of them. This is seriously a great snack and its easy to make but it is somewhat time consuming. What I basically did was slice up the zucchini into rounds. I then drench each zucchini slice in rice flour tapping off the excess and then I dip it into an egg mixture and then after that dip it into a panko breadcrumb mixture that was mixed with panko breadcrumbs, parmesean cheese, salt and pepper. I then lay out each chip on a baking sheet and baked at 400 degrees for about 15 minutes. They are so good when fresh out of the oven but if you have some leftovers I would just suggest putting it back into a toaster oven to warm it up and make them crispy again. Its a great snack I must say they are quite addicting to eat! ______________________________________________________________________
