Homemade Vietnamese Honeycomb Cake from scratch (Banh Bo Nuong)

Vietnamese Honeycomb Cake also known as Banh Bo Nuong is one of my all time favorite desserts! The cake isn`t sweet and chewy, coconut and pandan together tastes really delicious! I usually just buy a thin slice at the market for like $2, but recently at family potlucks-- I have a few talented aunts who make these cakes from scratch so my dad and I attempted to make our first batch today. It`s actually really confusing to this cake because there are SO many different recipes and I`m sure those who mastered the secret of baking this wouldn`t share! I must say my dad and I`s first attempt wasn`t so bad, there are some areas we have to improve but the cake was really good nonetheless.

Box coconut milk
Pandan leaves
Tapioca starch
Wheat starch
Sugar but I substituted sugar to brown sugar
Regular baking powder
Glabber Girl baking powder

Anolon Advanced Bakeware Cake Pan, 9.5" Fluted Mold from Macy`s

I purchased this for $21.99 and I used my Macy`s card for an additional 15% off. The pan is definitely an easy clean up and I think I read on the tag that it says life time guarantee? The handles are a nice touch - steady/slip free!

Do you like baking? I hate first attempts because they`re not always the best but it`s okay-- I am hoping to bake and cook more often this summer because I don`t at all.
