I`ve had a busy weekend and wasn`t able to blog as much as I`d like and the site was having issues every time I tried to log on. So, tonight I made a yummy homemade meal: vegetable egg foo young. It was soooo good! My husband and brother loved it. This was my first time actually making the whole meal with the white rice and gravy. I usually make an egg omelette with veggies and never even thought about it actually being the egg foo young patty. The gravy didn`t thicken up as quick as I had wanted or expected, but it was still pretty darn good.
I posted before about how much I love chinese food and now I can make one of my favorites at home. The patties came out rather large, so I just divided my portion of two patties into two servings and had it as two meals. While my brother and husband ate this whole plate as one meal each. Holy smokes! But it`s understandable, they work really hard. :) The patties are basically egg and veggie omelettes with a soy sauce and chicken broth base gravy over white rice. It`s pretty simple and you can customize it to fit your taste. I used eggs, green onions, fresh button mushrooms, and bean sprouts. They turned out wonderful. I hope you all enjoy!
