Homemade Udon Noodle Soup

Don`t you hate it sometimes when you consumed a big meal and you have leftover, and you have absolutely no idea what to do with it? Especially you don`t want to throw it in the garbage and waste it. That`s exactly what I`m dealing with at the moment. I have some leftover food remaining from Thanksgiving, the night I hotpot with my family. I decided to whip up a quick meal with my leftovers right after I got off work.

First, you have to defrost the noodles and fish ball. While you wait for it to defrost, you can boil some chicken broth soup. Meat is prepare fast once it touches hot temperature water, that can be the last thing to put into your bowl after you`re done with everything else. Scallion adds an extra flavor to your soup. Too bad I didn`t have any, but WALA, it`s complete and time to eat!
