Homemade Turkey Tetrazzini

This is what I prepared for dinner tonight. I suddenly got a craving for tetrazzini last week as I was preparing out weeks meals/grocery list. I decided I absolutely had to make it.

This is going to sound strange but back in elementary school I used to look forward to when they`d serve turkey tetrazzini. I know, cafeteria food should be gross... and for the most part it all was. But, for whatever reason I LOVED their turkey tetrazzini. I was the only one of any of my friends that liked it. Everyone else wanted the pizza.

This is an easy meal to make but it delicious and satisfying. It can be done in individual portions or as a big casserole, which is what I chose to do. This ends up having left overs that my husband can take to work and I and my son can eat for lunch.

I started by cooking a turkey breast in my slow cooker for 8 hours. Then, I pulled it out and let it cool before cutting it into chunks. On the stove, I boiled some water and prepared the spaghetti. In another pan I melted some butter and sauteed garlic and onion. Once they were softened, I added another pat of butter, then some flour. I let the flour cook down and then slowly poured in some chicken stock and then some milk. At this point I dumped in some frozen sweet peas. I let that come up to a boil, seasoned with salt and pepper, then mixed in quite a bit of parmesan cheese. Once the noodles were drained off I mixed them with this mixture. I then combined the chicken to everything and poured the whole mixture into a baking dish. I topped it off with a bit more parmesan cheese and some bread crumbs. It went into the oven (350 degrees) for an hour.

It is DELICIOUS! It is creamy and the cheese is melted into every single bite. This is definitely a meal worth having and trying. We are all happy now and with filled bellies of delicious goodness. :-)
