What`s an easy recipe to make for lunch? Tuna salad! This evening I made tuna salad to eat for work tomorrow. I found an extremely easy recipe off Food Network Kitchens website.
Prep Time: 15 minutes
What you`ll need?
2 - 6oz cans of white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onions
1 teaspoon minced flat-leaf parsley (I added basil instead because I didn`t have parley)
1/3 cups mayonnaise
1 tablespoon whole-grain mustard (I used regular mustard because I didn`t have whole-grain mustard)
Fresh ground pepper
Fresh squeezed lemon juice (optional - I did not add any)
In a bowl break up the tuna in a fork. Toss with the minced celery, onion, basil. Add mayo, mustard and dash of black pepper then stir well.
Eating tuna salad has many options, you can eat this cold back itself, with crackers or bread. I am going to eat this tomorrow with some whole wheat crackers.
