Chilly December weather calls for warm and toasty soup to warm the soul inside out. While browsing through my favorite recipe website by the name of "smittenkitched", I came across a soup recipe called <em> Roasted Tomato Soup with Broiled Cheddar</em>. I thought it was a very interesting recipe and a soup I`ve never tried before. The soup called for roasted tomatos in the oven with spices and olive oil along with roasted garlic. Once the tomatos were roasted, you transferred everything into a blender until smooth. Then cook up in a pot with some freshly chopped thyme, crushed red pepers, and stock. Once that was done, the top or lid consisted of toasted bread with grated cheddar. I poured my soup into mugs and floated the toast with the cheddar on top, baking in the oven until the cheddar melted.
It was overall a well done recipe and mine turned out really good! It was quite spicey though, so next time I will go a little easy on the red peppers. Another tip I would say is that make sure the bread is REALLY toasted so it doesn`t get soggy while baking in the oven. I will definitely be making this more often. Only bad side is that its quite time consuming. The tomatos take an hour to roast, then 25 minutes for simmering the soup, and another 15 for baking in the oven. But I mean, I have nothing but time so it really isn`t a big deal. I would definitely recommend trying it out if it sounds like your kinda food.
