This here was what I had for dinner last week. I popped into the grocery store on lunch to buy all the vegetables I would need to make a few dishes or two. What dish I was going to make I wasn`t entirely sure but I ended up grabbing some fresh essentials -- asparagus, onions, broccoli, zucchini (which I forgot to use), petite carrots, green peppers, salad supplies, and canned water chestnuts.
When I got home I decided to make a fresh vegetable stir fry and combined all my veggies into one pot with a little bit of olive oil and minced garlic and began cooking away. I threw the asparagus in first, then the onions and carrots. I then added in the green peppers, broccoli and the canned water chestnuts. Seasonings I used black pepper, sea salt, a little soy sauce and a little teriyaki sauce. I should have added the broccoli earlier because I felt I was waiting forever for it to steam thru. But overall, it was a great dish!
My chicken I had cut up into chunk size pieces and I marinated them in some sesame ginger sauce and baked them off in the oven -- turning halfway thru. The chicken came out really good and complimented the vegetables quite well. Then to keep the side, we had a simple steamed white rice.
I had wanted salad, really to try out the new salad dressing I had picked up at H-Mart to see if it was like the peanut dressing I get at the Japanese restaurant. It`s similar, but not the same thing (the restaurants salad dressing is sweeter), but it`s really good. Overall it was a great, filling meal -- one that I would make again no doubt.
