Homemade Sausage and Brie Hash
I love taking leftover out of my fridge, and using them to make some fantastic.
Last night for dinner, I used some leftover to make this great hash.
When I make a hash, I use eggs and potatoes, and I add a meat or protein, some cheese, and some veggies, depending on what I have.
First, I found a half of a left over sausage, so I cut it into small pieces and let it heat up in my pan, so they got nice an seared on the sides. In the meanwhile, I grabbed 2 small potatoes and grated them. Once I was done, I transferred the meat onto a plate and added the potatoes to the pan.
(A little tip when you are cooking grated potatoes, and you want them to crisp on all sides, instead of adding oil to you pan, and then having to add more when you flip the potatoes, add some oil to the potatoes before you put them on the pan. That way you will have some oil coating the whole thing, and won`t need to add more.)
I let the potatoes get nice and crispy, and used the time to hunt for some more ingredients to include. We had a small chunk of brie left over from a party, so I sliced it into small pieces. I also found half of a tomatoes that a cut into small pieces and grabbed some baby spinach as well and roughly chopped it.
Once my potatoes were nice a crisp, I added the sausage back to the pan and cracked 2 eggs on top, mixing the eggs around. Before the eggs fully cooked, I added the cheese, which melts really quickly, and topped with the veggies for a quick final stir.
It was delicious, even if I do say so myself! It`s really easy to get inspired and hash is a easy item to make. I always use whatever leftovers we happen to have and it always turns out great!
