Homemade Chicken Salad
I was having a lazy day today, so I didn`t really want to make food. But at the same time, we had leftover chicken kebabs in the fridge that I was getting bored of eating, so I wanted to do something different.
I decided to make myself a nice salad and add some of the chicken on top for protein. I used some mixed greens and romaine lettuce, and added some chopped cucumber and some sliced sweet mini peppers. I tossed everything with my favourite Sundried Tomato dressing before adding my chicken on top.
Salads are always great and easy choices. You can rumble through your fridge to see what veggies (or even fruits) you want to add and pick and choose what suits your tastes. As long as you can keep the dressing under control, they are usually a healthy choice!
It was a nice refreshing lunch, but with the chicken, it kept me very full.
