Homemade Rosemary Tomato Couscous!

Yesterday I went grocery shopping at Wal-Mart and I saw they had jugs of Couscous! Even thought it was expensive ($8/pound), I really love this stuff so I splurged. It`s so easy to make.

<li>1 cup water</li>
<li>1 cup couscous</li>
<li>small handful of dried rosemary</li>
<li>pinch of pepper</li>
<li>powdered chicken stock (or use chicken broth instead of water)
<li>2 Roma tomatoes (or any tomato you like)</li>
<li>olive oil (so the tomatoes won`t stick to your sautee pan)</li>

<li>Wash and dice the tomatoes. Sautee them quickly in a pan with the olive oil until water just begins to come out. Remove from heat.</li>
<li>Add water, pepper, rosemary, and powdered chicken stock to another pot. Bring to a boil and remove from heat. Add the couscous and stir. Let sit for about 5 minutes (or until water is absorbed). </li>
<li>Add the tomatoes and any juice from the sautee pan into the pot with the cooked couscous. Mix together and you`re done!</li>

I`ve already made this twice...and can`t stop eating it!
