Hi Everyone! Over the weekend, my husband and I decided to make homemade ricotta cheese. It`s super easy and waaay cheaper than store brought, plus it`s tastes better! My husband used a recipe from Mario Batali`s cook book.
Three ingredients used: Whole milk, half-half, and white vinegar. It takes about 30 mins to make.
Recipes from Mario Batali`s: Italian Grill
Makes about 2 cups
2 quarts of whole milk, 1 pint half-half, 1/4 cup distilled white vinegar or strained fresh lemon juice. Generous pinch of kosher salt, or to taste
Pour the milk and half and half into a large enameled or stainless steel saucepan, add the salt, and bring to a full boil. Remove from the heat, add the vinegar, and stir until the mixture has separated into thick curds and a clear liquid(the whey).
Set a sieve over a large deep bowl and line it with a double layer of wet cheesecloth (or a damp paper towel). Pour the curds and whey into the sieve and allow to drain for 15 mins(or up to 30 if you want a firmer cheese).
Scrape the ricotta into a bowl. It is ready to serve, or it can be covered and refrigerated over night. Enjoy!:0)
