i baked this red velvet bundt cake for my sister`s school carnival yesterday. they had a cake walk and they requested families to bring in store bought and homemade cakes, so i made one! sadly it wasn`t made from scratch, i used the duncan hines mix but it was quite good. i`ve never made red velvet from scratch but it`s something i want to try doing sometime, though it`s not my favorite. i feel like i`d rather put that effort into making something straight up chocolate.
the batter ended up being REALLY red. i was kinda surprised! i just followed the low fat recipe instructions which called for applesauce in lieu of oil. i used mostly applesauce but added just a bit of oil. i moistened the mix and wet ingredients with a spoon by hand and then i used a hand mixer to really blend the ingredients together.
the bundt cake turned out really well! i didn`t get to eat it so i can`t quite say how it tasted, but it looked the part lol
i used a bundt pan because i didn`t want to make a fancy layer cake or anything and for some random reason we have a bundt cake pan. i don`t even know how we came to own this pan and i don`t remember the last time anyone used it. i sprayed the pan with some pam cooking spray before baking to prevent the cake sticking to the pan.
i topped the cake with some store bought vanilla frosting that i melted and then drizzled on top.
i hope next time i can make one of these for my family instead of for someone else! haha my mom told me to just keep the cake but i went through all that effort to make it look pretty that we still ended up giving it to the school.
