I don`t eat bread bread often, so when I do eat a form of bread it is usually some sort of loaf I bake myself. About a week ago I decided to bake a pumpkin loaf, which is something I`ve never done before and I don`t know why since pumpkin is such a great source of vitamin A as it provides 100% of your daily vitamin A intake in a 1/2 cup serving. So I looked on my favorite site for recipes and found this recipe http://allrecipes.com/recipe/pumpkin-bread-iv/detail.aspx I of course only made one loaf and not 3 because that`s a little crazy lol. So I used
1 cup canned pumpkin puree
1/2 cup vegetable oil
3/4 cups brown sugar
4 small packets of stevia
1 cup all-purpose flour
1 cup of wheat bran
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon all spice
I did change the recipe a bit so I could lower the amount and type of sugar and add stevia and also add wheat bran. I also added more cinnamon and used all spice since I did not have nutmeg or cloves at home. I sifted all of the dry ingredients together minus the sugar. I combined the wet ones and then the sugar and mixed the dry ingredients in and added about 2 tablespoons of flaxseeds and poured it into a loaf pan which I sprayed with pam and then sprinkled the top with more flax seeds. I did bake this loaf for 60 minutes. May be it was cause I used less flour and used wheat bran which absorbed less of the liquid. Once it was cool however it did have the texture I wanted. I enjoy a strong cinnamon and spice taste to my loves so I always add more. If you don`t you may want to follow the recipe.
Have you cooked with pumpkin before? If so what did you make?
Or do you just enjoy pumpkin seeds?
Or do you hate pumpkin all together?
Side note: the pumpkin loaf stained my cutting board :( It took 2 good washes with hot soapy water to remove the yellow/orange that came from the pumpkin, so if you cut it you may want to place a paper towel underneath.
