A bakery near me makes really tasty peanut butter energy bars, with cereal and dried cranberries in them. I had some ingredients that I needed to use up at home, so I decided to make my own!
I sort of "doctored" a recipe from a few different ones I found, as I didn`t have many of the ingredients on hand. Here`s what I ended up using:
<ul><li>2 cups raisin bran cereal</li>
<li>2 cups rolled oats</li>
<li>4 tbsp hemp protein powder (this is what`s making the bars look kinda green, lol)</li>
<li>3/4 cup natural peanut butter</li>
<li>2/3 cup honey</li>
<li>1/4 cup brown sugar</li>
<li>1 tsp vanilla extract</li></ul>
First, I heated up the honey, brown sugar, and peanut butter in a saucepan till it was bubbly. Then, I stirred in the vanilla and removed the mixture from the heat. Then, I whisked together the rest of the dry ingredients in a bowl. I then added the wet mixture and stirred it into the dry mixture until it was combined. After that, I pressed the mixture firmly (using a spatula) into a greased 9" x 13" pan. I put it into the fridge for an hour to firm up, and it was ready to go!
I think these energy bars turned out fairly well, although they were too sweet for me and didn`t have enough peanut butter, in my opinion. Next time, I will try using dried cranberries, oatmeal, and rice krispies, while using less honey, no sugar, and more peanut butter. I`ll post about them if my next version turns out well! =)
