Peanut butter cookies are probably one of my favorite types of cookies after white chocolate macadamia nut cookies, but there was this one time I decided hey let`s be healthy and make peanut butter cookies with natural peanut butter and not the unhealthy stuff full of icing sugar and guess what that`s a big mistake lol. I used this recipe (http://allrecipes.com/recipe/classic-peanut-butter-cookies/detail.aspx) as it was popular and scaled it down to 6 servings
1/4 cup unsalted butter
1/4 cup crunchy peanut butter
1/4 cup white sugar
1/4 cup packed brown sugar
1/2 cup and 2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon baking soda
Instead of using crunchy peanut butter filled with icing sugar I used my natural peanut butter with nothing in it but peanuts, bad idea lol. The reason why is cause people bake according to sugary peanut butters and even with the added sugar, they didn`t taste so great and it was quite like eating baked peanut butter if you could imagine that. So I had to make improvements to them and I was like let`s melt some dark chocolate baking squares in a double boiler and pour a half a shot of Bailey`s Irish Cream in just for some added fun ;) Then I used a knife to drizzle it on top of the cooled cookies and placed them in the fridge for about 10 mins so that the chocolate mixture could settle and harden a bit. Praise the dark chocolate and the Bailey`s because without them natural peanut butter cookies are not so tasty.
