Homemade Pasta Arrabiata

I adore pasta dishes. I`m always drawn to new pasta recipes. I don`t think I`ve tried an Italian pasta dish that I didn`t like. This is a new one to me. I took a hand from Laura Vitale`s recipe for pasta arrabiata. She says that translates to "angry pasta" (the name given because of the red pepper flakes in the dish) When she was making it it looked delicious. Well, it tastes just as good as it looked. I`m glad I decided to try it out.

I started by browning up some thick cut bacon into a pan. Once it crisped up and the fat pulled out of it, I added in some sliced garlic and red pepper flakes. I let that cook for a few minutes and then dumped in my cans of tomatoes. She used 32 oz, I ended up using about 45 oz. I wanted more sauce to mine because of how much bacon I ended up using. I let that cook down for a bit of time while the pasta was boiling. When the pasta was done and drained, I cut in some fresh parsley to the sauce mixture and then some parmesan cheese. That was then mixed with the noodles and served up. I added a bit of extra cheese onto the top of my portion.

This was amazing, but the next time I make it I will use less bacon or sift some of it out after the fat has rendered because it was an awful lot of bacon in this dish. The flavors were awesome, though! I highly recommend trying this one out.
