I wanted homemade onion rings the other day and I finally got around to making them today! I got the oil and pancake batter going while my boyfriend used our mandolin to slice up a large Vidalia onion for me. I have never made onion rings like this before, but figured I`d give it a shot. They turned out really well!
After the onion was sliced and my oil was ready to begin frying, I dunked the sliced onions into the pancake batter (which was plain buttermilk pancake batter that you put together with water). I dropped the battered onions into the hot oil and fried on each side, then took them out and put them on a napkin covered cutting board and dusted with a generous helping of sea salt.
They came out perfectly. The onions got nice, soft and sweet which reminded me of the onion rings I get at the beach. I pay $4 for a large order at the beach, which is roughly 18-20 onion rings and I made a whole boatload of onion rings for roughly $3. Not bad, not bad!
