Homemade Minestrone

The weather where I live is getting cooler and cooler. This makes me extremely happy as I am much more of a cool weather girl than hot. I hated summer. But, on top of being cooler we have had several days of just grey rain. What goes better with a semi-chilly, rainy day than minestrone soup? Not much, that is what!

I started by heating some extra virgin olive oil in a soup pot. Once the oil was hot I added in some diced celery and onion. I let that cook up a bit and then added in some minced garlic. I let that cook for just a moment before I poured in some chicken stock and crushed tomatoes. I seasoned that with some salt, pepper, and dry Italian herbs. Next, I added in some garbanzo beans. I did used canned-I just drained and washed them. Next I added in some chopped cabbage and mixed chards. I used rainbow and green chard. You can use whatever your store carries. At this point I tasted the broth to make sure it had good flavor. I felt it was lacking so I added in more salt and pepper. I also decided it needed more onion and garlic flavor but at this point you don`t want to toss in raw onion and garlic so I used powdered. That worked out well. The final thing was to add in some ditalini pasta. I let that cook for about 15 minutes and then it was ready to serve. I scooped some out into bowls and topped them with parmesan cheese.

Mmmm! It was delicious and hit the spot on a chilly, rainy day. I have enough for some left overs, too!
