Homemade Mac n Cheese

I am fairly certain I have prepared macaroni and cheese a dozen different ways. This is yet another. I pulled inspiration, again, from Divas Can Cook.

This mac n cheese combines the noodles in a saucy mixture made up of milk, heavy cream, salt, pepper, paprika, a cheese sauce (similar to Velveeta) monterey jack cheese, colby jack cheese, and cheddar cheese. Everything gets poured together and put into a baking dish and then placed in the oven to set up.

Oh man it is delicious. I think, though, that I could have went heavier on the cheese. I know it looks like a lot but the flavor isn`t very strong. She used a smoked cheddar, which I couldn`t find...so that probably would have made a huge difference.

I had a serving of this earlier (as is), and I admit I went back for seconds. When I dipped out the second helping, though, I decided to jazz it up and sprinkle on a few drops of tobasco sauce over it. MMMM! That makes it REALLY good! (I do enjoy some spice, though)
